Julia's Favourite Fried Potatoes
Any condiment can be used with these but Julia loved them just plain. Mom would make these for her sometimes for her lunch and bring it to her at school, or would make them for her after school because she was always hungry when she came home. She loved fried potatoes. Julia went through a big growth spurt the year she went to Heaven and she loved food!

Instructions
  1. Peel and wash potatoes. Using a mandolin or a sharp knife, cut potatoes into slices in a circular shape. Slices should be about a ½ inch thick. Salt the potato slices.
  2. In a frying pan, heat oil and line the pan with the potato slices. As they turn golden brown, flip to the other side.
  3. Once potatoes are cooked, you can place on paper towel to soak up and excess oil or in a covered colander, serve warm.
