Julia's Favourite Italian Pasta Salad!
Julia loved my pasta salad. It is always the most requested food item when the girls came over, and I loved making it for them. I was always in awe of how many plates Julia would eat. She would often have a plate, eat it so fast and run back for more. She would eat so much as she didn’t want any left over for the other girls. It was so funny to watch them all fight over it. As most girls do, Julia would always pick out the veggies. After Julia went to Heaven, and the girls come over, we always set a plate full of pasta salad at the table for her. Instructions
  1. Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook for 7-8 minutes until al dente. Drain and rinse with cold water.
  2. In a bowl or jar with a lid, mix the olive oil, vinegar, balsamic glaze, Dijon mustard, salt, pepper & oregano and mix or shake well.
  3. In a large bowl, mix the cooked pasta with the dressing mixture you have just made, toss to coat.
  4. Add the cucumber, red bell peppers, black olives, cherry tomatoes and chopped parsley. Give it a mix.
  5. Cover and chill overnight or at least 4 hours. Made best the night before so the flavours can be absorbed by the pasta. You may need to adjust some of the vinegar flavours, depending on how you like it. I always seem to add a little more balsamic glaze the next day.
