Julia's Favourite Stuffed Artichokes
Julia loved stuffed artichokes. She would eat all of them in one sitting and not let her brother or sister have any. The more breadcrumbs in the artichoke, the more she loved them.

Instructions
  1. In a medium bowl, stir together the breadcrumbs, garlic, salt and pepper. Set aside.
  2. Trim the bottom of each artichoke. With a knife or kitchen shears, remove the thorny tips from the artichoke by cutting ¼ inch off the top.
  3. Using a cutting board or other flat surface, bang the top of the artichoke so the leaves of the artichoke open up. Use your fingers to separate the leaves.
  4. Wash each artichoke underneath running water and place top down in a colander so it can dry.
  5. Stuff the breadcrumb mixture between all of the leaves.
  6. Place artichokes, stem side down in a pot. Make sure that the artichokes fit tightly so that they can stand up. Fill pot with 1 inch of water and drizzle olive oil over the artichokes.
  7. Place on cook top on medium/low heat. The water will evaporate, so add more water as needed. To see if the artichokes are ready, pull one of the leaves and eat the part closest to the centre or heart of the artichoke to see if it is cooked. Cooking time is about 45 minutes (more or less).
